Well, the recipe might look messy, but it tastes really good. This vegan recipe only takes 15 minutes to make, 15 minutes to bake and 15 minutes to enjoy. Now, messy or not, a tasty and healthy dessert is what matters!

Ingredients:

Servings: 1-2

  • 2 pieces of banana bread  (I used whole-grain brown bread with raisins)
  • 1 ripe banana
    0.5 cup oat milk (might vary based on how ripe or mushy the banana is)
  • 1 tbsp. brown sugar
  • A few drops of pure vanilla extract (optional)
  • Regular butter (for 100% vegan recipe, switch to vegan butter)
  • 1 tsp. Cornstarch (optional)

Timing:

  • Processing time: 15 minutes
  • Making time: 15 minutes
  • Cool down: 15-20 minutes

Vegan Pudding vs Regular Pudding

I was looking for a vegan air fryer banana bread pudding recipe. But I could not find the recipe anywhere. Most people use regular milk and eggs for any pudding. So, I substituted these 2 animal products in my recipe. 

This recipe is:

  • Dairy-free
  • Egg-free
  • Contains healthy fats
  • Naturally sweetened 
  • Air fryer-made vegan pudding

Steps: 

Prepare the ingredients: 

  • Cut the bread into small square pieces and remove the outer crust.
  • Add oat milk, mushed banana, and sugar in a bowl and whisk until only a few banana lumps are present.

Note: I did not add any sugar to my recipe. I do not like very sweet desserts. The banana and raisins helped to naturally sweeten the recipe. Feel free to add brown sugar according to your taste.

  • Soak the bread pieces in a mixture of oat milk, mashed banana, and brown sugar for 10–15 minutes.

Thickening oat milk mix:

If you want to thicken the mix, add a bit of cornstarch. Normally, people use 1 tsp. of cornstarch per cup of oat milk. Start with 1/4 tsp. and go up to 1 tsp.

Note: Do not add too much, as cornstarch might cause digestive issues in some people.

Layer the pudding and toppings:

  • Lay the soaked bread in an aluminum tray or ramekin.
  • Add a layer of the banana-oat milk mixture.
  • Add another layer of bread.
  • Top with soaked raisins, the remaining banana mixture, and shaved almonds and pistachios.
Note: The bread I used as the base already had raisins. So, I skipped the additional raisins.
  • Add vegan butter on top halfway through the baking. This will add a more appealing golden brown color to the top.

Air fryer baking:

  • Put the ramekin or the aluminum tray in the air fryer and bake at 350°F for 15 minutes. 
  • Finish off with more butter until golden brown.
  • Enjoy the vegan pudding after cooling it down. 
  • You can refrigerate for a day or two.
